I'm Giuliana and he is Daniele
and today we will cook two basic mexican recipes
Guacamole and pico de gallo
which are really easy to make
and that you can use to spice up an happy hour
or as a starter.
For the guacamole we will need:
2 avocados,
1 lime,
some coriander, preferably fresh, but if you can't find it, in powder it'is ok too,
oil, salt, an onion and some garlic.
You can serve it with the classic nachos
which you can find in the majority of supermarkets,
or if you want a more original taste
you can use tostadas, which can be found in mexican food specialized stores.
For pico de gallo we will need:
tomatoes,
onion,
coriander and lime.
We can start!
First of all let's prepare the avocados,
so we cut them by the half
and we remove the kernel.
Then we scoop out the pulp.
The avocados must be soft
because if they are too unripe you can't prepare the guacamole correctly.
Am I right?
Yes!
We move the pulp into a plate
and we squash it with a fork
until it becomes a cream, but not too smooth
it's ok if there are some larger pieces
they make the guacamole more delicious.
Once we reached the right texture
we squeeze a lime and we already did it
and we add it straight away to avoid the avocado getting dark.
Maybe half a lime juice is enough
because if you add too much it will be too sour.
Yes I would say half is enough,
Don't throw away the other half as we will need it for the pico de gallo.
Now we leave the avocados aside and we cut the tomatoes.
We need to cut them in tiny pieces
and remove the seeds.
We chopped the tomatoes
now we move them into a dish
and we will check the quantities once we will mix all the ingredients,
by now I cut a big one.
Anyway if it should be too much don't worry as we will need it for the pico de gallo too.
Now we chop up onion and garlic
together using the half-moon knife.
Now we can mix the ingredients and check the quantities,
in order to have a balanced result.
We add onion and garlic,
and we mix them in to check if we need more.
Don't add too much otherwise it will be too strong
and hard to digest.
As I said we will keep this for the pico de gallo
Let's add the tomato
ok, now let's add the coriander,
a tea spoom should be enough,
but you can always taste it and add some more if you like it better,
salt,
and lastly to make it smoother let's add the oil.
And the guacamole is ready
You can put it in the fridge
to cool it down and make it more tasty
Now while Daniele puts this in the fridge we can start the pico de gallo recipe.
We have nearly all the ingredients ready, so let's grab a bowl
and we mix the tomato,
if you want you can obviously chop up some more,
garlic and onion,
The juice of half a lime,
coriander,
salt
and some oil.
Et voilà, the pico de gallo is ready too!
We just need to serve the recipes.
Here is our finished dish
Nachos, tostadas, which are fried tortillas a lot tastier than nachos,
and which you will break into pieces to eat
and you can finally enjoy your meal!
They're so yummy!
